1/3 cup tamarind pulp or paste
1/3 cup cane syrup or corn syrup
1 ½ Tbsp. orange zest
1 tsp. coriander, ground
2 Tbsp. parsley, chopped
10 Alaska Rockfish fillets (4-6 oz. portions)
- Blend tamarind, syrup, zest and coriander in a bowl; stir in parsley.
- Grill or sauté rockfish, glazing with syrup the last few minutes of cooking.
