
Greek Grilled Alaska Cod
2 cups cucumber, ½-inch dice
¼ cup scallions, minced
2 Tbsp. extra virgin olive oil
2 Tbsp. red wine vinegar
Salt and pepper, to taste
10 Alaska Cod fillets (4-6 oz. portions)
¼ cup Greek seasoning mixture, prepared
- Combine cucumbers, scallions, olive oil and vinegar. Season with salt and pepper to taste. Reserve.
- Sprinkle cod with Greek seasoning mixture and grill until opaque throughout.
- Spoon cucumber salad over fish to serve.
