1 large cucumber, peeled with some green stripes showing, halved lengthwise, seeded, and cut crosswise into 1/3-inch slices
1 white onion, halved and sliced 1/8-inch, rinsed
1 cup each red and yellow bell peppers, diced
2 Tablespoons toasted sesame oil
1 cup white distilled vinegar
3/4 to 1 cup sugar, to taste
1/4 teaspoon crushed red pepper flakes (or use an Asian chili condiment)
2 Tablespoons toasted white sesame seeds
2 teaspoons black sesame seeds (optional)
1/2 teaspoon kosher salt
1 package (8 oz.) Alaska Surimi Seafood (Imitation Crab)
In a large bowl, mix together cucumber, onion and peppers.
In a separate bowl, whisk together sesame oil, vinegar, sugar, red pepper flakes, sesame seeds and salt. Mix until sugar is dissolved.
Pour dressing over cucumber mixture and refrigerate at least 4 hours before serving. Gently stir in Alaska Surimi Seafood just before serving.
