Ingredients

Alaska Pollock:

  • 1 pound Alaska pollock
  • 1 Tbsp. canola oil
  • 1 Tbsp. shallots, minced
  • 1/2 tsp. garlic paste
  • 1/2 tsp. fresh ginger paste
  • 1 tsp. ground turmeric
  • 1-1/2 Tbsp. lime juice
  • 1/2 Tbsp. fish sauce
  • 1 tsp. sugar

Chilled Noodles:

  • 8 ounces whole wheat thin spaghetti

Nuoc Cham Dipping Sauce:

  • 1/4 cup fresh lime juice
  • 1/2 tsp. fresh garlic paste
  • 1/2 Tbsp. fish sauce
  • 3 Tbsp. water
  • 1-1/2 Tbsp. sugar
  • 1/2 small Thai bird or serrano chili, minced

1/4 cup fresh dill, roughly chopped

1/4 cup green onions, thinly sliced

1/4 cup dry roasted peanuts, chopped

                       

Directions

Alaska Pollock: 

Preheat oven to 400oF. Rinse any ice glaze from frozen Alaska pollock, pat dry. Place in a spray-coated baking dish/pan and tightly cover with foil. Bake for 15 minutes or just until fish is opaque throughout. Pour off any liquid. Heat a small saucepan over medium heat. Add oil and shallots; saute until shallots begin to brown. Stir in garlic and ginger: cook 2 minutes. Stir in turmeric; cook 1 minute. Add lime juice, fish sauce and sugar; simmer 3 minutes. Pour sauce over cooked fish. Break up until sauce is evenly distributed, keeping fish chunky. Keep warm.

 

Chilled Noodles:

Cook spaghetti until al dente. Drain; shock in cold water, drain. Refrigerate until needed.

 

Dipping Sauce:

Whisk lime juice and garlic paste in a container; let sit 5 minutes. Add fish sauce, water, sugar and chilies; whisk until sugar has dissolved. Keep cold.

 

To Serve:

Place 1 cup chilled noodles into a bowl. Top with one-fourth of fish. Add 1 tablespoon each dill, green onions, and peanuts. Serve with dipping sauce on the side.
