  1. Eligibility: The Swap Meat for Alaska Seafood Professional Chef Recipe Contest (“Contest”) is open only to working professional chefs/cooks who are legal residents of the 50 United States and D.C., and are 18 years of age or older as of April 1, 2015. A working professional cook/chef includes anyone who is currently receiving compensation for food preparation services. Consumers are ineligible. Employees of Alaska Seafood Marketing Institute (ASMI), its subsidiary companies, affiliates, distributors, participating retailers, advertising and promotional agencies, the Administrator, and the immediate families (spouse, parent, child, sibling and their respective spouses or registered domestic partners) and household members of such employees are not eligible. Contest is void where prohibited by law and is subject to all federal, state and local laws and regulations.
  2. Promotion Period: Contest starts April 1, 2015 at 12:00:01 a.m. PT and ends at 11:59:59 p.m. PT, June 1, 2015. All entries must be received by 11:59:59 p.m. PT, June 1, 2015.
  3. To Enter: Upload your full Swap Meat for Alaska Seafood Professional Chefs recipe, photo of recipe and complete the entry form at www.wildalaskaseafood.com/swapmeat. For purposes of this Contest, a Swap Meat for Alaska Seafood Professional Chef recipe is defined as “any foodservice recipe where a professional chef/cook uses one of the Alaska seafood species replacing where the professional chef/cook would typically use meat (beef, pork, lamb, or poultry)”. Ingredients must be listed in exact U.S. measurements in order of use, followed by step-by-step preparation instructions; cooking, chilling and holding times; oven temperatures and number of servings (must serve 4-6 people). You must include a name for the recipe, upload a photo of your recipe, and include at least 4 oz./serving of at least one of the Alaska seafood species. Eligible species include Alaska salmon (king, sockeye, coho, keta, pink), crab (Dungeness, snow, king), cod, pollock, halibut, sole/flounder, black cod (sablefish), rockfish, spot prawns, Weathervane scallops, or Alaska Surimi Seafood. Enter as often as you wish, but each recipe submitted must be unique. Entries must be received by 11:59:59 p.m. PT, June 1, 2015.
  4. Submission Requirements: Recipe must be written in English, fit into a foodservice menu category, be the original work of the entrant, and the sole property of the entrant. Recipe must not have been previously published or submitted in another recipe or food contest. Sponsor reserves the right, in its reasonable discretion, during or upon completion of the Promotion Period, to request that any entrant resubmit his or her Entry which fails to comply with the Contest entry requirements prior to judging or voting.Submission of Entry grants Sponsor the right to publish, use, adapt, edit and/or modify such Entry, including each component thereof (the recipe and any photo) in whole or in part, in any way, in any and all media worldwide, without limitation and without consideration to the entrant. Submission of an Entry further constitutes the Entrant’s consent to allow Sponsor any and all rights to use the recipe including each component thereof (the recipe and any photo you submit) for any and all promotional purposes. Recipes and photos may be posted on Sponsor’s website, social media sites and/or third party websites, such as YouTube, with or without entrant’s name and/or restaurant name.
  5. Judging:
    • One (1) culinary professional will select the top twenty (20) recipes based on the following criteria:
      • Fit with Swap Meat Concept/Creativity (40%) – Recipes will be judged for use of Alaska seafood in creative ways for fitting the Swap Meat concept.
      • Recipe Accuracy/Methodology (40%) – Recipes must have a clear, concise list of ingredients in order of use with proper sequence and proper Alaska seafood preparation.
      • Applicability on Restaurant Menu (20%) – Recipes will be judged for actual likelihood of being menued.
    • A team of trained culinarians will evaluate the top twenty (20) recipes previously selected using the criteria above, to determine the five (5) finalists.
    • The recipes of the five (5) finalists will be prepared by a professionally trained chef and the three prize winners will be chosen by members of the Alaska Seafood Marketing Institute’s foodservice staff based on:
      • Flavor (60%)
      • Creativity/Originality (30%)
      • Visual Appeal (10%)

    Judging will take place in June, 2015. The First Prize winner will be the entrant with the highest score.

  6. Prizes:
    • One (1) First Place Prize: $2,500 Visa® Gift Card.
    • One (1) Second Place Prize: $1,000 Visa® Gift Card.
    • One (1) Third Place Prize: $500 Visa® Gift Card.

    All taxes on prizes are the responsibility of the winner. Prizes may not be transferred. No prize substitution except as provided herein. Visa is a trademark of Visa, Inc. Visa, Inc. is not affiliated with this Contest in any way.

  7. Winner Notification and General Conditions: Winners will be notified by certified mail. If prize notification is returned as undeliverable, prize will be forfeited. Winners will be required to sign and return an affidavit of eligibility and liability/publicity release within 14 days of date on notification letter. Failure to complete this will result in disqualification, and an alternate winner may be chosen. Sponsor reserves the right to require a background check to confirm eligibility as outlined herein and to help ensure that the use of winner’s name and/or likeness in advertising or publicity will not bring Sponsor into public disrepute, contempt, scandal or ridicule or reflect unfavorably on the Sponsor as determined by Sponsor in its sole discretion. By entering, entrants agree that Alaska Seafood Marketing Institute, and the State of Alaska, its subsidiaries, affiliates, directors, employees, agents, successors and/or assigns and their advertising and promotional agencies, and participating retailers shall have no liability and shall be released and held harmless by entrants for any damage, loss or liability to person or property, due in whole or part, directly or indirectly, by reason of the acceptance, possession, use or misuse of prize or participation in this contest. Submission of an Entry constitutes permission to the Sponsor to use winner’s Recipe, his/her name, his/her restaurant name and likeness for publicity purposes without further compensation in any and all media now known or hereinafter without territorial restriction (except where prohibited by law). Sponsor is not responsible for incorrect or inaccurate entry information whether caused by entrants or by any of the equipment or programming associated with or utilized in the Contest or for computer system, phone line, hardware, software or software malfunctions, or other errors, failures or delays in computer transmissions or network connections that are human or technical in nature. Sponsor is also not responsible for any injury or damage to entrant’s or any other computer resulting from accessing the Contest website. Sponsor reserves the right, in its sole discretion, to cancel or suspend this Contest and award the prize from among all eligible entries received prior to action taken by Sponsor, should fraud or other causes beyond the control of Sponsor corrupt the administration, security or proper play of the contest. Sponsor reserves the right, at its sole discretion, to disqualify any individual, and all of his/her entries, who tampers with the entry process. Personal information collected in connection with this Contest will only be used for the purpose of administering this Contest. By entering, entrants agree that all issues and questions concerning the construction, validity, interpretation and enforceability of these Official Rules, participant’s rights and obligations, or the rights and obligations of the Sponsor in connection with the contest, shall be governed by, and construed in accordance with, the laws of the State of Alaska, without giving effect to any choice of law or conflict of law rules, and entrants consent to the jurisdiction and venue of the federal, state and local courts located in Juneau, Alaska.
